Salmon Makes For a Yummy Taco Filling
Grilled Steak: posted at MetromixRecently I saw a segment on the Early Show that freaked me out. I've heard the warnings about red meat and cholesterol for half my life but I never really paid attention to any of it mostly because I LOVE red meat! I have low cholesterol so what do I care?
Then the Early Show told me that there is a direct link between a high intake of red meat and DEATH! Ehhh, what? According to the study we can safely consume no more than 5 oz of red meat PER WEEK! Are you kidding me? I could eat that much before dinner.
On the one hand I could jump on the flaws of the study and try to defend my lust for beef. The study depended on the memories of people age 50-71 to accurately report their eating habits. Putting aside obvious memory issues in this age group I would also bet that they actually under reported their red meat intake because of the general stigma. The reality then could in fact be much worse that what was reported.
The safer bet, on the other hand, is to take this seriously and make more room in my life for chicken and fish. And so, the recipe hunt begins. Did I mention I'm not particularly wild about chicken or fish.

from Babygossip.netI made the decision that day to zap red meat from our diet. Waaaaaaa! You don't know how painful this is to me. There is nothing better than a good hamburger, taco, chili, or steak. Yum! So now I'm on the hunt for alternatives. I've made a good vegetarian and turkey chili for years so that's cool but what about tacos, burgers, and steak?
Tonight I disposed of the taco problem. Here's the Amazing Salmon Tacos recipe. I added a 1/2 teaspoon cayenne to the salmon shake and we used crunchy taco shells but I followed the rest of the recipe as written. The flavor was so unique I never for a moment wished there was beef in my crunchy shell. It was delish and we will make it again.
Woo hoo, there may in fact BE life after BEEF! Or, perhaps I should say, there may in fact be LIFE without beef!
